Rhöm Alpina favours brine curing

Turin-based producer of raw cattle hides and wet blue skins Rhöm Alpina, S.r.l. has introduced brine curing rather than salt packing for some of its hides. All of its manufacturing plants will use the method in the near future.
Brine curing is a much quicker method. Agitated brine curing involves soaking skins in large vats called raceways in disinfectant and brine. After approximately 16 hours in the raceway, the skins are completely penetrated by the salt.
The company’s total production capacity ranges from 1,700 hides per day in low kill season to slightly more than 4,000 pieces per day in high season, which lasts approximately seven months.
